The Choice Restaurant opened its doors in December 2017, born from a shared family dream and a passion for exceptional food and genuine hospitality. At the heart of The Choice is Chef Volodymyr Hyvel, a native of Western Ukraine whose culinary journey has taken him from London to Odesa and New York. His experience includes renowned kitchens such as Nobu in London, Renaissance Banquet House in Odesa, and Le Cirque and Bond Street in Manhattan. Together with his wife, Iryna, he brought that experience, creativity, and dedication to Bryn Mawr, creating a restaurant centered on thoughtful modern European cuisine. From the very beginning, The Choice has been a true family endeavor. Volodymyr and Iryna, together with Iryna’s brother, Ihor Hanushchak, and his wife, Maryana, worked as one family — sharing the challenges of opening and growing a restaurant while raising their children along the way. Though Ihor and Maryana have since moved on to new ventures, they will always remain an important part of The Choice story. Over the years, the children have grown up alongside The Choice, and today they continue to be part of the restaurant and lend a hand whenever needed. Family has always been at the heart of The Choice, both behind the scenes and in the way guests are welcomed. Our Ukrainian heritage remains close to our hearts. Since the war began in Ukraine, the kindness and support of our guests have meant more than words can express. Through initiatives such as our Ukrainian borscht fundraisers, with 100% of proceeds donated to support Ukraine, our community has helped us give back to the country we proudly call home. Today, The Choice remains guided by the same values that inspired its beginning: exceptional food, warm hospitality, family, and the belief that the most memorable dining experiences are created with heart.
